After almost seven years of service, Ixtapa Mexican Grill closed its doors May 31.
Owners Lucie and Luis Munoz, who are moving south to be with Luis’ ill mother, sold their space to a new Mexican restaurant.
Luis said while down in Nashville, Tenn., they’re planning on opening a new restaurant to continue business.
When the two started the restaurant in November 2012, Luis said they decided on Bellevue because the Midwest had a nice, non-competitive atmosphere.
“We started looking around and it was between Bellevue and Independence, Mo.,” Luis said. “We really like the size of Bellevue and the location. We like being near military bases and college is a plus, too. Everything lined up and we liked the area.”
Lucie said she was happy for the seven years of friendly customers.
“It was a really good feeling — we were worried about, ‘How are they going to like our food?’” she said. “They accepted us here, and it was amazing.”
One thing the Munoz’s will miss is the customers they’ve built relationships with over the years.
“(Luis) has made a lot of good friends here, almost like family,” Lucie said.
Luis said many customers loved the restaurant’s salsa, among their other dishes.
“We even jarred some up in Mason jars so they can save them long term,” he said.
Luis said he hopes Bellevue remembers the restaurant for serving the community.
“Owning a restaurant is not just owning and restaurant — we want to be part of the community and help out when we can,” he said. “We’re going to miss Bellevue.”
