The Mosaic Pickle, a food truck based in Omaha, is on the Food Network’s list “50 States of Food Trucks.” The truck, which launched in 2013, started after owner Deanna Jones won a local chili cook-off.

Among the items on the truck’s menu: deep-fried corn on the cob, a Reuben sandwich and dishes with global inspiration, like a gyro transformed into a puffy taco or Cuban sliders.
