Diane Bruce called it a “soft opening” and a “training period” for her staff, but Bellevue’s long-awaited B&B Classic Dogs, with its Nathan’s Famous Frankfurters, opened Friday on schedule and to a busy lunchtime crowd.

Bruce, together with Jerry Charvat, owns the restaurant which has been on its way since April 22 when the Bellevue City Council gave final approval for it to open at 1020 Lincoln Road on the west end of the strip mall across from the Bellevue Public Library.

Bruce said the full menu of 19 “dogs” is not yet on offer though everything will be up to speed after the first week of November. In the meantime, she is offering customers a 25 percent discount as a thank you for their patronage during the staff training period.

Friday afternoon, her kitchen staff was busily serving up seven varieties of hefty frankfurters with various sides, including fries, coleslaw or sweet potato fries.

The large section of the restaurant dedicated to video games, pinball machines and other popular entertainments were available but unused, waiting for children to discover their availability in coming months. Children might also notice the tables are chalkboards, with chalk provided for their doodlings.

Televisions are plentiful, including the Big Ten Network, and beer sales are permitted, though a special section has been designated for customers who wish to order beer.

Bruce said the restaurant will be open every day and the hours will be 11 a.m. to 11 p.m. Sunday through Thursday and 11 a.m. to midnight Friday and Saturday.
