Two Sarpy County restaurants that recently opened are hosting ribbon cuttings this week.

Bellevue's first Egg & I, which opened Sept. 10 at 2015 Pratt Ave., held a ribbon cutting at 8:30 a.m. today.

Valentino's To Go at 72nd and Giles Streets will cut its ribbon at 4 p.m. Wednesday. The business opened about a week ago.

Valentino's President Tony Messineo said the store is the first to feature "Val's Via Mia," which loosely translates to "Val's My Way." Customers can customize their pizza with different toppings, sauces, cheeses and crust and watch as it's made right in front of them.
