Breakfast franchise Egg & I will open a restaurant in Bellevue this fall.

Construction is underway at 2015 Pratt Ave., near Famous Dave's, and the location is expected to open in early September, vice president of operations Mark Agnew said.

Agnew said the ownership group chose Bellevue because of Offutt Air Force Base and because Bellevue may be underserved when it comes to breakfast options.

“I think there's plenty of pie to slice up,” Agnew said.

The same owners have three locations in Omaha, two locations in Lincoln and one in Kearney. They plan an eighth location in Papillion, which is expected to open in mid-November at Midlands Place, a new development at Nebraska Highway 370 and 84th Street.

Each store will employ 25 to 30 people. About 15 of the positions at each store will be full-time.

The owners also have a development agreement to open 10 locations in Iowa, Agnew said.
