Lincoln lands state's first Mellow Mushroom
Nebraska's first Mellow Mushroom pizzeria is open in Lincoln's West Haymarket.
The new location of the restaurant, which has served its fresh stone-baked pizzas for more than 40 years, is at 601 R St.
Owners Debbie and Mike Nelson said they first went to a Mellow Mushroom when their daughter attended Clemson University in South Carolina. The Georgia-based chain has locations all over the U.S.
The Lincoln restaurant features a patio adorned with sculptures of gears and sunflowers. The inside has a “Mother Earth” theme, with sculptures of bees carrying pollen, a life-size mosaic tree made of stained glass and a beehive made of pennies, all under a giant mushroom that canopies the entire interior.
The menu has pizzas, hoagies, salads, calzones and appetizers, and serves food for vegetarians, vegans, kids and gluten-free diners. A full-service bar has craft beer, wine and cocktails.

Bellevue native the world's female eating champ
Bellevue's Molly Schuyler was named this week the world's No. 1 female independent competitive eater by All Pro Eating, the world's only independent competitive eating organization.
Schuyler, 33, has competed in more than 20 food eating contests this year, three of them sanctioned by All Pro Eating. She recently signed on to work with the organization.
Earlier this month, she won the Mushroom Festival's national fried mushroom eating championship by taking down 9 pounds of fried mushrooms in 8 minutes. The win established a new record at the contest — she blew away last year's record of 3.5 pounds consumed — and that was the win that earned her the No. 1 independent female competitive eater title.
In July, she won the Royal Caribbean Bakery national bun and cheese eating championship by eating seven bun-and-cheese sandwiches in 1 minute, 29 seconds. She also won the Caribbean Food Delights national beef patty eating championship, consuming eight beef patties in 1 minute, 46 seconds.
She beat the current top-ranked eater in the world, Jamie “The Bear” McDonald, at both events.
Schuyler is scheduled to compete this weekend at the Ian's Pizza national pizza eating championship in Madison, Wis. Other events coming up for her will be the Great Pumpkin Farm World hands-free pumpkin pie eating championship in Buffalo, N.Y., on Sept. 29 and the Bierhaus NYC National Oktoberfest bratwurst eating championship in New York City on Oct. 26. She will be competing against several ranked competitive eaters at these events, including McDonald.
