This year's bonus cookie recipe comes from Linda Skutchan of Omaha. Skutchan and her mom created good memories with these cookies during the holidays. “Although baking isn't my thing, and my mom is gone now, these are so easy I am able to keep the memories alive when I make them at Christmastime,” she said.
L.A. Easy and Breezy Sugar Cookies
1 cup shortening
1 cup sugar
1½ teaspoon vanilla
2 cups unsifted flour
1 teaspoon baking soda
1 teaspoon cream of tartar
½ teaspoon salt
Cream shortening and sugar in large bowl at medium speed. Beat in egg and vanilla.
Combine flour with baking soda, cream of tartar and salt. Blend into creamed mixture.
Cover and chill at least 2 hours.
Preheat oven to 375 degrees.
Roll out dough on floured surface to 1/8-inch thickness. Cut with cookie cutters. Place on ungreased baking sheet.
Bake at 375 degrees for six to seven minutes. Cool on sheets about one minute and remove to cooling racks.
Makes 5½ to 6 dozen cookies.
Test kitchen notes: I painted icing onto these cookies before I put them in the oven. The cookies expand while baking, though, so the icing cracked, producing a crinkled effect. If you want a more traditional icing look, frost the cookies after they've baked.
